When it comes to dinner for my family, baked chicken & potatoes is a favorite! I can easily prep all of the ingredients and put them in a baking dish to heat in the oven. This makes it an easy choice for those on-the-go days when we’re busy with life.
Not only is this recipe easy, it’s also delicious and very filling. Sometimes it feels as if my kids have bottomless pits rather than stomachs.
Even after eating dinner, they’ll ask for a snack or for more. This dish is so filling and delicious that it quickly fills them up for the night. It’s that satisfying!
BAKED CHICKEN & POTATOES
Ingredients
- 1 pound Chicken Tenders (diced)
- 4-6 Small Russet Potatoes (diced)
- 1 1/2 cup Shredded Cheese (your choice)
- 1/2 cup Milk
- 1 tablespoon Flour
- 2 tablespoons Butter (melted)
- 1/2 teaspoon Salt
- 1 1/2 teaspoons Slap Ya Mama Seasoning
- 1 teaspoon Garlic Sriracha Seasoning
- 1/4 teaspoon Chili Powder
- 1/4 teaspoon Paprika
- Bacon Bits
- 1 Stalk of Green Onions
- Olive Oil
Additional Items Needed
- 9×13 Baking Dish
- Medium Skillet
- Medium to Large Stock Pot
- Strainer
- Measuring Spoons
How to Make Baked Chicken & Potatoes
- Preheat oven to 350 degrees.
- Dice green onions and set aside.
- Dice chicken and set aside.
- Rinse potatoes and dice into 1 inch chunks. Rinse again and place into a medium to large stock pot with water to boil until they are almost done.
- While the potatoes are cooking, add olive oil into a skillet with chicken, salt, ½ teaspoon Slap Ya Mama seasoning, ½ teaspoon Garlic Sriracha seasoning, chili powder, and paprika. Cook over medium heat in a medium skillet until the chicken is fully done.
- At this point, the potatoes should be done. Using a strainer, drain off the excess water and set aside.
- In a glass measuring cup, melt butter. Once it is melted, add milk and flour then mix with a whisk. Set this aside for a minute.
- In a 9×13 baking dish, add chicken & potatoes, along with the milk, butter, and flour mixture, remaining Slap Ya Mama and Garlic Sriracha seasoning. Toss everything together.
- Top with shredded cheese, bacon bits, and green onions.
- Bake for 25-30 minutes.
Serve with salad, green beans, or steamed vegetables.
