Leftover Ham Pasta Recipe Ingredients
- 1 pound package ham, diced or leftover ham diced
- 2 hard-boiled eggs
- 1 – 16 ounce box rotini pasta
- 1 large avocado, diced
- 1 head of broccoli, diced
- 1 1/2 cups mayo
- 1 tablespoon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Serves: 6 for dinner (more as a side dish or as a potluck side)
Prep Time – 10 minutes
Cooking Time – 15 minutes
Leftover Ham Pasta Recipe Instructions
- Cook pasta as directed. Drain and then cool the pasta to room temperature.
- Add in ham, diced egg, avocado, and broccoli with pasta in a large bowl.
- In a small bowl, mix together salt, pepper, mayo, and mustard. Whisk well.
- Scoop into large bowl and toss well until all ingredients are coated.
