I’m so excited to finally share our easy meal ideas, like this muffin tin omelets recipe that will keep you on the go as we head back to the hustle and bustle of the school year. Heading back to school each year proves to be a challenge since our routine falls to the wayside as soon as summer begins.
This year our oldest son starts junior high school and that means that our mornings will start earlier with a little more chaos than the years past. It will definitely be a transition for myself as well as our son, but this year we will be ready for it! I can guarantee there will be a lot of these easy omelets in muffin tins in hand as he walks with his friends to school every day! :)
Easy Muffin Tin Omelets Recipe
Ingredients
- 2 cups Egg Beaters
- 3 slices of deli ham (thin sliced)
- 1 slice of cheese
- 1 tsp. of Slap Ya Mama Seasoning
- Non-stick Cooking Spray
- *optional: pinch of bell pepper and onions
Instructions
- Preheat oven to 350°
- Pour Egg Beaters into measuring cup
- Chop ham and cheese into small diced pieces (if using onion and bell pepper also, dice these as well)
- Add Slap Ya Mama Seasoning along with the ham & cheese into mix
- Spray muffin pan with non-stick cooking spray
- Stir mixture with a fork and pour into muffin pan
- Place muffin pan into the oven and cook for 15-18 mins.
- Once egg muffin omelets are done, immediately turn over muffin pan to remove the omelets from the pan
