If you have room in your vehicle for an ice chest, then chicken salad is one awesome meal for the road. You can pack the chicken salad with a variety of veggies (celery and onions count). You can serve the chicken salad with sandwich bread or crackers. Either way, it will be delicious.
Turkey Wraps
If you’re looking for something a little more filling for your family as you travel, consider turkey wraps. You can put anything in the wraps that you’d like. We like to add a little bit of our favorite dressing to give it a little more flavor and kick.
Pasta Salad
Pasta salad is a great road trip snack. We like to pack them in individual serving cups to make it easier to eat while on the road. Of course, we’re not afraid to stop while on the road either if we can find a nice picnic spot, then this is where we’ll enjoy our pasta salad. PB&J
As much as I love cooking, packing a PB&J for the road is more than okay. This is especially true if you have little ones and just need something quick to eat while on the road. Peanut butter and jelly is easy to clean up and very inexpensive to make.
