Southwest Beef Enchiladas
These super easy Southwest Beef Enchiladas scream Texas. It’s the perfect mix of classic flavors with a little Southwest and Texas twist. I know your family will love this just as much as mine does!

Southwest Beef Enchiladas Recipe
Ingredients
- 1 pound ground beef
- 1/2 medium red onion (diced)
- 1/2 medium poblano pepper (diced)
- 1/2 medium jalapeno (seeded & diced)
- 1/2 cup frozen corn
- 1/2 can (15 oz) black beans
- 1 enchilada sauce powder mix
- 1/2 – 1 cup shredded cheese
- 1/2 can (15 oz) enchilada sauce

How to Make The Southwest Beef Enchilada Recipe
- Prepare veggies (onion, jalapeno, and poblano pepper)and set them aside.
- Brown hamburger meat.
- Add in veggies and cook for an additional 4-5 minutes or until they are tender.
- Mix in the corn, black beans, and the packet of enchilada seasoning.
- Mix all ingredients, and scoop into flour tortillas.
- Roll tortillas and line in the bottom of the prepared (spray with non-stick spray) casserole dish. Top with canned enchilada sauce, any excess filling, and shredded cheese.
- Bake at 350 degrees for 15 minutes or until cheese is melted and bubbling.
