Combine butter, sugar, egg, and extract in a mixer.
Blend at medium speed, scraping the bowl often, until creamy.
Add flour and salt, and blend at low speed until well mixed.
Divide and use food coloring by mixing in each color.
To make the cookies, insert a 1M tip into a pastry bag.
Fill the bag with cookie dough. If it's hard to pipe add the 1 tablespoon water. Warming the piping bag with your hands will help to pipe out the cookies.
Pipe the cookies in a rotated motion on to a baking sheet lined with parchment paper.
Bake for 5 to 8 minutes, or until slightly golden.
Remove the cookies from the oven and place them on a cookie rack to cool.
Melt black candy melts in the microwave as directed.
Carefully dip the cookies into the black candy melts and place them on a rack to dry.
Sprinkle the star and confetti sprinkles onto the candy coating before it hardens
Let the chocolate fully harden before serving and/or store the cookies in an airtight container.
Enjoy!
Notes
You can use peppermint, rum, coconut, or any other flavor extract instead of vanilla extract to change the flavor of your cookies.
